Sweet Potato Burrito


Ingredients for one: 

• 1 whole wheat/sprouted tortilla
• 1 cup kale
• 1/2 sweet potato
• 1 tsp pesto
• 1/4 cup diced tomato1 tsp coconut oil

Optional additions (highly recommended):  

• avocado
• salsa of choice 



First: cook your sweet potato
- throw it in the oven at about 350˚ for 20 minute
- once cooked, dice up the potato into squares
- put coconut oil into a frying pan and heat up. 
- once heated added kale first and sauté for about 30 seconds
- add sweet potato, diced tomato and pesto to the kale
- sauté all the ingredients together for about 2 minutes
- while sautéing heat up tortilla
- add all the ingredients into the tortilla and enjoy
