Pita Pocket Scramble

I could honestly eat pita bread all day everyday I love the stuff so much! Buuuuut I don't. I do, however include it in my favorite meal of the day and I'm satisfied.  


  • 1/2 piece of Whole Wheat Pita Bread
  • 3 Eggs
  • 1/8 of a whole onion (approximately a handful) 
  • 1/4 of a bell pepper, or 1/8 of two different bell peppers (you want about a large handful of peppers at the end) 
  • 1/8 of a whole tomato (approximately a handful) 
  • Salsa of Choice (Green Salsa Verde from Trader Joe's is Whole 30 approved and also my favorite!)  
  • Avocado - It's not pictured here but I highly recommend adding it, and to anything else for that matter. 
  • dash of salt
  • 1 tsp of pepper
  • 1 tbsp of coconut oil 



 - chop all your veggies and toss into a frying pan. 
- add coconut oil and salt and pepper to your liking
While those are frying...

I learned from Cameron Diaz in, The Body Book, that two egg whites to one whole egg is the perfect balance of protein to carbs when it comes to eggs.

  • Break one whole egg into bowl, add two eggs whites to bowl... and beat. 
  • Stir in eggs to the frying pan and scramble everything to your liking 

Pita Bread

  • Throw the 1/2 slice of pita bread into toaster while scrambling

Once the pita is toasted you will carefully open the pocket and add all the ingredients, careful, I'm sure it will overflow. 

Top off with avocado and salsa and you've got yourself a pocket full of sunshine.
